The taste of the sun-ripened apples stays, while the temperatures at the burning progress get hold as low as possible. Only the heart of the doubble burning process, the so-called middle course, gets used for the production.

The fresh distilled schnapps gets storaged for many months in the so-called "Hafele" (Earthenware vessel) to have less sharpness.
