The Alte Haus-Zwetschke from the Fein-Brennerei Prinz from Hörbranz has a wonderfully mild taste with a pleasant sweetness and a fabulous fruit intensity, proving that plum brandy has a special richness of facets.
The taste of the finely bitter plum is preserved by keeping the temperature as low as possible during the distillation process. Only the heart of the double firing process, the so-called middle course, is used for the production.
In order to take the heat off the freshly distilled schnapps, it is stored for many months after the distillation process in the so-called "Hafele" (earthenware vessels). The air exchange through the micropores in the earthenware filters out unwanted flavours. On the other hand, important taste nuances and aromas can develop. The wonderfully fragrant plum distillate is then stored in wooden barrels for several months, adding fruit extracts. This not only gives the Alte Hauszwetschke its unmistakable taste, but also its golden yellow colour.
