The Alte Waldhimbeere from the Fein-Brennerei Prinz from Hörbranz is another of the ''Alte Sorten'', which has become a MUST for all raspberry lovers due to its intense and fruity taste.
In order to preserve the full aroma of the fresh raspberries, they are macerated (soaked in alcohol). The taste and the raspberry aroma are dissolved in the alcohol. The so-called macerate is then distilled in copper stills at a low temperature. The subsequent double storage makes the Alte Waldhimbeere from Prinz so unique.
After distillation, the freshly distilled schnapps is stored for many months in the so-called "Hafele" (earthenware vessels) in order to take its heat off. The air exchange through the micropores in the earthenware filters out unwanted flavours. On the other hand, important taste nuances and aromas can develop. For finishing, the liquor is stored in wooden barrels, where it not only acquires its beautiful red-golden colour, but also the fruit aromas of the raspberries are emphasized even more.
