The history
The building in which the first whiskey distillery on Lake Chiemsee is located was built in 1994 by master brewer Oliver Lange and put into operation as brewery Chiemseebräu.
In 2012, a 300 liter stainless steel burning plant was installed by the specialist company Holstein from Markdorf am Bodensee and started production of the Kymsee whiskey in the summer of 2012.

The production
From the first production step of wort preparation to filling and labeling of the bottles, everything happens under the same roof.
Dark barley malt
The dark barley malt is supplied by a small, family-run Bavarian malting. The malt used is a pure product without additives. The barley grains are first soaked, then germinated and then sealed at a temperature of 120 ° C. This process gives the malt its coloring and intensive malt flavors.
Water
The excellent water of Steinweiherquelle is of high quality, fresh and naturally pure, that it can be passed from the source without treatment in the pipeline network.
Yeast
The fermentation always takes place with fresh and active bottom-fermented yeast.
The production
The Kymsee whiskey is made of dark barley malt with the water of the Steinweiherquelle. It is fermented gently with bottom-fermented yeast, whereby the fermentation lasts 3 times as long as usual. By this elaborate, but gentler process basically much less common base alcohols are produced, so that the firing process provides a much finer, the flavors beneficial result. This effort, combined with the 3-fold distillation guarantees, an extremely high-quality craft product, for which the Kymsee whiskey distillery guarantees its name.
The storage
The Kymsee whiskey is stored in so-called short American white oak barrels. These barrels were previously used only briefly and once to finish a fine bourbon. Here, the multi-layered aromatics in the barrel combine with our whiskey to create a unique taste experience.
